Prepare apples by cutting about 1 inch below the top of the apple. Set aside. Use a paring knife and cut out the core, making sure to leave the bottom still intact. Repeat with remaining apples.
In a medium bowl mix together the brown sugar, raisins, pecans, butter, cinnamon, and nutmeg. Stuff each apple with the filling. Top with the top of the apple and stuff into a slow cooker.
Pour the apple cider into the slow cooker and cover and cook until apples are tender, about 3 hours. Serve warm.
Notes
We like to use apples such as Gala or Macintosh to bake due to their crisp nature.
Serve the baked apples with vanilla ice cream for a decadent treat.
