Ingredients

  • 1 1/4 cup all-purpose flour
  • 1/4 tsp cinnamon
  • 1/2 cup butter, softened
  • 3/4 cup pecans, chopped
  • 1/2 cup powdered sugar, sifted
  • 1/2 tsp vanilla extract
  • 1 1/2 cup Powdered sugar, for dusting

Instructions

  • Preheat your oven to 400ºF and grease a cookie sheet.
  • In a large bowl combine the flour and cinnamon. Set aside.
  • In another large bowl add the butter, pecans, powdered sugar, and vanilla extract, and beat until blended. Batter will be very stiff.
  • Using your hands, roll 1-inch balls and place on the cookie sheet. Bake until light brown, about 10-12 minutes. Cool slightly then roll cookies in the powdered sugar. Cool completely before serving.

Notes

These cookies over bake easily so keep a close eye on them.
Taste familiar? These little cookies are a copy cat recipe of the Keebler cookie.

Perfect Pairing

Serve these cookies with a big pitcher of Sangria.
