Instructions
South Carolina Mustard BBQ Sauce
If desired, make the BBQ sauce a day or two ahead of time. That'll give the flavors more of a chance to meld.
Whisk together all BBQ sauce ingredients. Cover and refrigerate until ready to use.
Pork Chops and Rub
Mix together the dry spices, then sprinkle over the pork chops.
Heat a grill to medium-high (or put them over the hotter side of the grill), then add the chops. Cover and cook for 2 minutes. Flip and cook another minute.
Reduce the heat to medium-low, or transfer them to the cooler side of the grill. Mop on some of the barbecue sauce, flipping and mopping more as desired. Grill a few more minutes until they reach an internal temperature of 145 F.
Remove chops from the heat and let rest a few minutes before slicing. Serve warm with a side of extra sauce.
