Prepare salad dressing by whisking together olive oil, lemon juice, salt, and pepper. Set aside.
In two mason jars layer in this order: dressing, red onion, peas, carrots, egg, and finishing with the spinach. Top with cover and place in the refrigerator until ready to eat.
Notes
To prevent soggy greens, pack the dressing in the bottom and the greens on the top.
