In a small bowl combine mayonaise, ketchup, creole spice mix, garlic powder, paprika, and lemon juice. Set aside.
For The Shrimp
In a large bowl combine milk, hot sauce, and egg, whisking to blend. Add the shrimp and let sit for 4 minutes. Meanwhile heat 3 inches of oil to 375ºF in a deep saucepan.
In a small bowl combine flour, cornmeal, baking powder, salt and pepper. Add shrimp and toss to coat.
Add a few shrimps to the oil and fry until golden brown, about 3 minutes. Use a slotted spoon and remove shrimp from oil and transfer to a plate lined with paper towels. Repeat with remaining shrimp.
To Serve
Place a slathering of the cajun sauce on the french roll. Top with fried shrimp, lettuce, and tomato.
Notes
When frying the shrimp be sure to not over-crowd the pan otherwise your shrimp will take longer to cook and will absorb more oil
If you cannot find french bread rolls, buy a french baguette and cut it into 4 equal portions.
