In a medium cast-iron skillet over medium heat, combine 1 1/2 cups apple juice and apple slices. Bring to a simmer and cook until tender, about 10 minutes, turning apples over frequently. Remove apples from dish and set aside.
In a blender combine remaining 1/2 cup apple juice, cornstarch, spices, and sugar and blend until smooth. Whisk the mixture into the hot apple juice in the skillet and bring to a boil while whisking constantly. Once thickened, add apples back to the pan and stir together. Serve.
Notes
Serve with a bit of cinnamon sprinkled on top.
We really like using Golden Delicious apples, but you can always substitute a granny smith if needed.
