Preheat your oven to 400ºF and spray a baking sheet with cooking spray.
In a bowl mix together the duck, panko, ginger, garlic, five-spice, and salt and pepper. Add milk and egg and mix. Heat a skillet with vegetable oil and roll meat into balls and place on the baking sheet.
Bake meatballs until cooked through, about 15 minutes.
Meanwhile make the sauce by combining the hoisin sauce, ketchup, rice vinegar, and Sriracha in a saucepan and heat to a simmer. Add the meatballs to the sauce and toss to coat.
Notes
Make your own ground duck by cutting small pieces of duck and freezing them. Once frozen, pulse in a blender or food processor until ground.
Serve with toothpicks for an appetizer.
