In a small bowl combine jerk seasoning mixture and rub on the chicken breasts. Drizzle with olive oil and grill until chicken is cooked through, about 15 minutes. Remove from grill and cut each chicken breast into 3 pieces.
Meanwhile prepare the salsa by mixing together the mango, onion, cilantro, and lime juice in a small bowl.
Prepare the sandwiches by slicing the rolls. Add a piece of chicken and top with lettuce and tomato. Serve with the mango salsa.
Notes
If you want your salsa a bit hotter, add 1/2 a jalapeño.
