In your slow cooker add the butter, honey, orange juice, orange zest, ginger, salt. Whisk to combine. Add in the carrots and toss to combine. Coker and cook until carrots are tender, on HIGH 2-3 hours , stirring halfway through. Serve with a sprinkling of fresh thyme.
Notes
Feel free to use baby carrots instead of cutting up large carrots in this recipe.
If you want a thicker glaze, add a cornstarch slurry (2 tsp cornstarch and 2 tsp water) during the last 30 minutes of cooking.
