Preheat your oven to 350ºF and line a baking sheet with parchment paper.
In a bowl cream together the butter and sugar until light and fluffy. Add in flour and vanilla and mix until combined. Portion cookies into 24 balls and flatten cookies with the tines of a fork.
Bake the cookies until golden on the bottom, about 12-14 minutes. Remove from baking sheet and cool completely. Dip half of the cookie in the melted chocolate and let set. Serve.
Notes
If your dough seems a little soft chill it for 1 hour before baking.
Add another layer of flavor by sprinkling the chocolate with sea salt.
