Saddle up! These Mint Julep Jello Shots are perfect for a picnic or a day out in the country riding some horses. Or better yet, straight from the mold in the fridge.
In a small saucepan add the water. Sprinkle in the gelatin and let soften, about 5 minutes. Stir in the mint leaves and sugar and cook on medium-low, until sugar and gelatin are dissolved, about 5-6 minutes. Do not bring the mixture to a boil.
Strain the mixture through a fine-mesh strainer and press a spoon to the mint leaves to extract all of the essential oils. Stir in the bourbon and let sit 10 minutes for the gelatin to start to thicken.
Meanwhile place one small mint leaf in each ice cube tray mold and cover with the mixture. Let chill until set, about 4 hours or overnight.
Gently remove the jello by using the handle of a spoon to disengage the jello from the mold. Serve.

Serve these jello shots upside down to make a half dome.
You can always use plastic jello shot cups but we love the appearance of these molded jellos shots.
