Preheat your oven to 350F and lightly grease baking sheets.
In a large bowl beat together unsalted butter, granulated sugar, brown sugar, salt, baking powder, and vanilla extract. Stir in the all-purpose flour and fold in the crushed potato chips.
Drop the dough onto the prepared baking sheets by the teaspoonful. Bake until the edges are golden brown, about 15 minutes. Remove the cookies to a wire rack and cool to room temperature. Dust with powdered sugar.
