Venison Breakfast Sausage Patties

- 1 lb. ground venison
- 8 oz ground pork
- 1 Tbsp brown sugar
- 1 tsp Thyme
- 1 tsp dried sage
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp oil
In a large bowl mix together ground venison, ground pork, brown sugar, thyme, sage, salt and pepper. Shape into 10 patties.
In a medium skillet heat 1 tsp oil over medium-high heat. Add sausage patties and cook until browned, and cooked through. Serve.
You can also make these ahead of time. Shape the patties and freeze them until needed.
We added the pork to add a bit of fat to the sausage so when buying ground pork, tend to buy fattier grounds.
