Tropical Pineapple Moonshine

Kiss the dog days goodbye with this Tropical Pineapple Moonshine that immediately whisks you away to a white sand beach with your toes in the sand.

Ingredients
  

  • 1 cup pineapple juice
  • 2 vanilla pods, sliced down the center
  • 1 8-ounce can coconut water
  • 2 cups white sugar
  • 1 pineapple (Can use 46-ounce can of pineapple chunks)
  • 750 ML Everclear or plain moonshine

Tropical Pineapple Cocktail

  • 4 oz Tropical Pineapple Moonshine
  • 4 oz club soda
  • Splash of lemon juice
  • Crushed ice

Instructions
 

Pineapple Simple Syrup

  • Combine pineapple juice, vanilla pods, coconut water, and sugar in a saucepan over medium heat.
  • Stir until the sugar dissolves, and bring to a boil. Reduce heat and simmer for 5 minutes.
  • Remove the vanilla pods. Set aside and cool syrup.

Tropical Pineapple Moonshine

  • Break down pineapple and slice into cubes if you're using a whole pineapple. Add cubes to a large bowl and mash with the back of wooden spoon. If you have muddling tools, you can use those to get the job done.
  • Add moonshine and Pineapple Simple Syrup to the bowl. Stir to combine.
  • Portion into 8-ounce mason jars. Split pods into equal segments so each jar has a vanilla pod inside.
  • Store in a cool, dark place. If your pantry is out of direct sunlight, that's the perfect place for this infusion.

Tropical Pineapple Cocktail

  • Combine Tropical Pineapple Moonshine and club soda in a glass. Add a splash of lemon juice and crushed ice, and stir to combine. Garnish with a slice of pineapple if you like, and enjoy your trip to the tropics!

Notes

As we always say, the longer a moonshine infusion sits, the better it gets. This infusion will store up to a year in a cool, dark place, but please imbibe responsibly.
