750MLEverclear or plain moonshine
Tropical Pineapple Cocktail
4ozTropical Pineapple Moonshine
4oz club soda
Splash of lemon juice
Crushed ice
Instructions
Pineapple Simple Syrup
Combine pineapple juice, vanilla pods, coconut water, and sugar in a saucepan over medium heat.
Stir until the sugar dissolves, and bring to a boil. Reduce heat and simmer for 5 minutes.
Remove the vanilla pods. Set aside and cool syrup.
Tropical Pineapple Moonshine
Break down pineapple and slice into cubes if you're using a whole pineapple. Add cubes to a large bowl and mash with the back of wooden spoon. If you have muddling tools, you can use those to get the job done.
Add moonshine and Pineapple Simple Syrup to the bowl. Stir to combine.
Portion into 8-ounce mason jars. Split pods into equal segments so each jar has a vanilla pod inside.
Store in a cool, dark place. If your pantry is out of direct sunlight, that's the perfect place for this infusion.
Tropical Pineapple Cocktail
Combine Tropical Pineapple Moonshine and club soda in a glass. Add a splash of lemon juice and crushed ice, and stir to combine. Garnish with a slice of pineapple if you like, and enjoy your trip to the tropics!
