Preheat oven to 375˚F and prepare a sheet pan with parchment paper.
In a small bowl combine the apples, lemon, and apple pie spice. Stir in caramel sauce.
Prepare egg wash by combining egg with 1 Tablespoon water.
On a floured surface cut the pie dough into 4-inch circles with a cookie cutter. Place a small bit of apples in the middle of the circle and brush egg wash on the outside of the circle to bind the dough. Fold and press the edges with a fork to seal. Place on prepared sheet and repeat with remaining dough rounds and apples.
Brush with egg wash and sprinkle with sugar. Bake until golden brown and crispy, about 15-20 minutes.
Remove from the oven and let cool for a few minutes before serving
