Preheat the oven to 350 degrees F, and butter a 9x5x3 inch loaf pan. Using an electric mixer with a paddle attachment, cream butter and sugar until texture is light and fluffy. Add in the eggs and beat until fully combined.
In a medium bowl, combine dry ingredients. After mixing together fully, add to the butter mixture and mix until combined. Be sure not to overmix! Add in bananas, sour cream, and vanilla, and mix until just combined. Stir in nuts.
Pour batter into prepared pan, and bake until a cake tester or toothpick inserted into the middle of the bread comes out clean. Cooking time should be about 1 hour 10 minutes. About 10 minutes after taking it out, transfer bread to a cooling rack until it reaches room temperature.
If you choose to make the cream cheese frosting-filled banana bread, make the cream cheese frosting by beating the cream cheese, confectioner's sugar, 1/4 teaspoon salt, and 1/2 teaspoon vanilla extract in an electric mixer. Beat until smooth.
