Cherry Almond Muffins
Start your morning off on a cheery note with these Cherry Almond Muffins made with frozen cherries and a hint of almond extract.
- 2 eggs
- 1/3 cup milk
- 1/3 cup vegetable oil
- 1 tsp vanilla extract
- 1/2 tsp almond extract
- 1 1/2 cups all purpose flour
- 3/4 cup sugar
- 2 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup frozen cherries
- Preheat your oven to 400ºF and line a muffin tin with paper inserts.
- In a bowl whisk together the eggs, milk, vegetable oil, vanilla extract and almond extract. In a separate bowl whisk together the flour, sugar, baking powder and salt.
- Pour the wet into the dry and mix until moistened. Fold in the cherries. Spoon batter into cups and bake until a toothpick inserted comes out clean, about 18-20 minutes. Remove from oven and serve.
You can use chopped fresh cherries for this recipe as well. This makes a fun Sunday brunch meal.
