This single-serving blueberry lemon mug cake is the perfect midnight snack with a tall glass of milk. Shh, we won't tell!

  • 2 Tbsp butter melted
  • 1/4 cup flour
  • 2 Tbsp sugar
  • 1 egg yolk
  • 1 Tbsp milk
  • 1/4 tsp vanilla extract
  • 1/4 tsp baking powder
  • 1/2 tsp lemon zest
  • 1/4 cup blueberries
  • 1 tsp turbinado sugar


  • In a large mug mix together melted butter, flour, sugar, egg yolk, milk, vanilla, baking powder, lemon zest, and blueberries.
  • Top with turbinado sugar. Microwave until the cake pulls away from the sides, about 1 minute 30 seconds. Let cool.


Make sure to keep an eye on your cake while it bakes. Over-baked mug cakes get a bit rubbery.
We recommend using a 12 or 14 oz mug to fit the cake.
