That's where one of our favorite food bloggers Minimalist Baker comes in. Using her two-ingredient recipe, you can skip the hefty price tag and make your own fresh batch of coconut yogurt at home.
Two ingredients may sound too good to be true, but it can be done and she knows just how. As a master of plant-based food and 10-Ingredient or less recipes, the Minimalist Baker has had plenty of experience taking few ingredients and turning them into a wonderful meal. This vegan yogurt is no exception to the rule. Creamy, coconut-y, and full of probiotics, take a look at how it's done.
What I love about this yogurt is it lacks a sweetened flavor. I find that the average yogurt in the grocery store has way to much sugar added, turning it into an unbearably sweet sugar bomb. Coconut yogurt on the other hand relies on the natural sweetness of the fruit, making it just right. And the Greek yogurt style texture is an added bonus.
In a mixing bowl, pour in a can of full fat coconut milk and whisk. Add probiotic powder and stir with a wooden spoon until everything is mixed in evenly. Place a cheese cloth over the top of the bowl and secure it with a rubber band. Let it rest for 1-2 days at room temperature so the probiotics can do their thing, then grab your spoon and dig in.
While this is all about two-ingredients, you can add in whatever plant-based foods you want to turn it into an easy breakfast meal. Fresh fruits, jam, chia seeds, and granola can turn it into a morning power bowl to kick start your day. If you want an extra thick consistency, you can try adding agar agar. Agar agar is a gelatinous substance made from red seaweed and is used as a natural thickener. And don't worry about getting a taste of the sea with it, agar agar is flavorless.
