However, the classy, adult version of this childhood drink is even better- a wine float. This is exactly what it sounds like, and it's the perfect way to treat yourself and welcome spring!
What is a Wine Float?
A wine float is essentially a berry-flavored cousin of a mimosa- instead of orange juice, you get strawberry. This sweet and refreshing drink consists of sparkling wine, creamy vanilla ice cream, club soda, strawberry rose syrup, and a garnish of your choice! If you're wondering what rose syrup is, it's made from rose petals, water, and sugar, and it adds subtle but tasty floral notes to any drink. This float recipe uses strawberries, but maraschino cherries or raspberries work too. Fortunately, it's really hard to make a wine float that doesn't taste delicious, so you can use variations for most of the ingredients.
For more berry flavor, use raspberry ice cream, sorbet, or strawberry sherbet. You can also go with sparkling water or seltzer in place of club soda if that's what you have on hand. If you don't have sparkling wine or prosecco, using any white wine or red wine will create an equally yummy result, just choose your favorite wine. Red wine ice cream floats will have a stronger wine flavor, similar to sangria, and you might want to add an extra dash of club soda to keep it light and refreshing. How to Make a Strawberry Wine Float
In a small glass, combine the club soda and Monin Strawberry Rose Syrup. The Strawberry Rose syrup is a part of Monin's floral line that includes lavender, honey jasmine, and lavender lemon. Any one of these flavors would pair perfectly with ice cream and a hint of champagne!
Put a scoop of ice cream into a serving glass.
Top with the strawberry syrup mixture, letting the bubbles fizz down.

Strawberry Rose Wine Float
- 1 scoop vanilla ice cream
- 1/2 cup club soda
- 1-2 tbsp Monin Strawberry Rose Syrup
- 1/2 cup dry champagne or sparkling wine
- In a small glass combine the club soda and Monin Strawberry Rose Syrup.
- Put a scoop of ice cream into a serving glass.
- Top with the strawberry syrup mixture, letting the bubbles fizz down.
- Add in the champagne and garnish with strawberries. Enjoy!
