Thanks to Food Wishes, this recipe for red eye gravy a great way to make the most of any leftover ham (and coffee) you may have in the kitchen, plus, it only takes 10 minutes to prepare!
Ingredients (to serve 2);
1 tbsp vegetable oil
1/2 cup of chopped fatty ham
1/8 cayenne pepper
Salt and freshly ground black pepper (to taste)
4 thick slices of ham
1 tsp flour
2/3 cup black coffee
To kick things off, fry the chopped ham in a pan of vegetable oil on high until it browns. Once the meat begins to change color and becomes sticky, remove it (making sure you hold on to the leftover grease in the pan!)
Once you've taken out the chopped ham, reduce the pan's heat to medium and add the 4 slices of ham, seasoning it with the pepper and cayenne, until it browns.
When cooked, remove the ham, turn down the heat to medium/low and sprinkle the flour into the pan. Continue to stir for 2 minutes before turning the heat back up to medium/high and adding the black coffee.
All that's left to do is season, taste and enjoy!
