Homemade Sweet Potato Tater Tots

These Homemade Sweet Potato Tater Tots are so easy to make and taste delicious dipped in a bit of ketchup. Make up a whole batch of these and try not to eat them all!

Ingredients
  

  • 2 sweet potatoes, peeled
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp cajun seasoning
  • olive oil

Instructions
 

  • Preheat your oven to 450ºF and line a baking sheet with parchment paper.
  • In a large pot of boiling water, add the potatoes and cook for about 15 minutes. This will parboil the potatoes so they will be slightly firm but able to be pierced with a fork.
  • Drain the potatoes and let cool 10 minutes. Using a box grater, grate the potatoes and place in a bowl. Season with salt, pepper, and cajun seasoning and form into tots.
  • Place on the baking sheet and drizzle with olive oil. Cook 30 minutes, flipping halfway through. Serve with ketchup.

Notes

Make sure to only cook your potatoes to the par-boil stage otherwise it will be very messy to grate.
If you want a crispier tot, throw them under the broiler until golden brown.
