- 1 1/3 cup sugar
- 1/2 cup light corn syrup
- 1/8 tsp cream of tartar
- 2 tsp baking soda
- Line a 8-inch square baking pan with aluminum foil and spray with baking spray. Measure out baking soda and set aside along with a whisk to get ready for cooking.
- Using a heavy-bottomed saucepan add sugar, corn syrup and cream of tartar. Stir to moisten sugar. Turn on heat to medium-high and bring to 300ºF without stirring.
- Once mixture reaches temperature (it should take 5-10 minutes) remove the pan from the heat and immediately whisk in baking soda for about 5 seconds. Immediately pour into prepared pan and let cool for at least 1 hour. Break up by smacking honeycomb with a knife.
Store uneaten honeycomb in an airtight container up to 4 days. Drizzle the Honeycomb Candy with chocolate and sea salt for an extra decedent treat.
