  • 1 1/2 cup all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1 cup brown sugar
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 eggs
  • 1 cup canned pumpkin
  • 1/3 cup vegetable oil


  • Preheat your oven to 350ºF and coat a loaf pan with cooking spray.
  • In a medium bowl mix together the flour, baking soda, baking powder, salt, brown sugar, cinnamon, and nutmeg. Stir to combine. Add the eggs, canned pumpkin, and vegetable oil and stir.
  • Pour into the loaf pan and bake until a toothpick inserted comes out clean, about 1 hour. Let cool in pan for 20 minutes before removing from pan and cooling completely.


Add a bit of nuttiness to your bread by folding in 1/2 cup of chopped pecans.
Serve with butter and jam if desired.
