Serve some bacon and vanilla ice cream along with these crispy golden brown homemade waffles and everyone, young and old, will go to bed happy and full.


Naturally sweet from the bananas and chocolate chips, you can add a teaspoon vanilla extract or softened peanut butter for even more flavor. While buttermilk, maple syrup, large eggs, cream cheese, and other commonly used ingredients can add to the carbohydrates, cholesterol, and saturated fat in these, you can serve them with a big glass of milk and claim you're getting some Calcium and Vitamin A in. Easy! The old-fashioned oats provide the all important fiber, and flax and bananas make this a potassium-rich take on Belgian waffles. Easy to adapt to a gluten-free or vegan meal plan as well.

This waffle recipe will become your secret weapon of bringing everyone to the table any time of day or night. Making a "flax egg" is a vegan egg replacement that even non vegans will like.

Equipment: One large bowl, a waffle maker, cooking spray, and an appetite.

This easy recipe can be adjusted to be vegan. If gluten-free is not a requirement, then feel free to use regular all-purpose flour.

You'll need these dry ingredients: flaxseed meal, one teaspoon salt, rolled oats, all-purpose flour, baking powder, regular size or mini semi-sweet chocolate chips.

You'll need these wet ingredients: 2 ripe bananas, water, oil or melted butter, and milk.

Get Cooking!

To make the "flax egg" mix the flaxseed and water in a large bowl, stir well and let sit for five minutes to thicken. Add the bananas and baking powder to the flax egg and mash it thoroughly with a fork.

Add oil and start whisking with glee! You are about to enjoy your new favorite recipe! Add milk and whisk some more. Now add oats and salt and keep combining. The final step is adding the chocolate chips. Regular size chocolate chips give a more rustic look to your waffles.

You want your waffle batter on the thicker side. If it's runny, add a little more flour. Too thick? add a little more milk.

Start preheating your waffle iron. Once iron is hot, lightly spray with cooking spray. Using a measuring cup as a scooper, add just under one cup of waffle batter to the hot waffle iron. Cook according to your waffle maker's instructions.

When waffle batch is done, use a cooling rack to keep them crispy before you dig in. Stacking makes them soggy! You can also keep the batch warm in the oven on low until all your waffles are done.

In the unlikely event that you have leftover waffles, freeze them in a single layer between parchment paper in a freezer bag for up to month. They reheat great in a toaster oven
