As the weather cools off, it’s the perfect time to grill up hot and comforting foods that will make your heart and stomach happy. If you love baked potatoes, this recipe for barbecue potato bombs is guaranteed to become your new favorite.
Core Out Your Potatoes
Grab an apple corer and twist it into the side of your potato. Slide it through until there’s a hole through both ends. Don’t throw your potato cores away — You’ll need them later!
Choose Your Stuffing
The best part about this recipe is that you can literally put any sort of stuffing inside. Choose your favorite meat and wrap it around a stick of cheese, or add in some chopped garlic. Whatever you put inside will get hot and delicious, so you really can’t go wrong. Once you’re done stuffing, take your potato cores and cut them in two. Stick them back into the holes on each side to seal in your stuffings. Don’t worry if they stick out, that’s exactly how you want them.
Wrap It Up
Next, take a few slices of uncooked bacon and wrap them around your sealed potato. Place it on a sheet of aluminum foil, then sprinkle it with pepper or your favorite barbecue sauce. Wrap your potato up completely to keep any of the stuffing from falling out onto the grill.
Get to Grilling
Use tongs to place each wrapped potato onto the grill. You’ll want to leave them on for about a half an hour before flipping each potato over — This ensures they all cook evenly.
