Icebox cakes are greatest in the summer because they are refreshing, delicious and, best of all, don’t require baking. This lemon raspberry icebox cake is no exception; it’s just as tasty as it is pretty. Also, it only requires six ingredients.
- 2 cups heaving whipping cream
- 1/3 cup powered icing sugar
- 1 teaspoon vanilla
- 1 cup lemon curd
- 9-10 large graham crackers
- 2.5 cups raspberries
The whipping cream, sugar, vanilla and lemon curd combine to make a sweet, light filling. Next, layer the topping and graham crackers on top of each other. Then, the last step is to refrigerate overnight. Watch a video demonstration from The Recipe Rebel below.
If you don’t have time to refrigerate overnight, the original recipe suggests that six hours should suffice. Furthermore, if you don’t know exactly what lemon curd is – you’re not alone.
