Bonbons, known for their decadence and delicious chocolate shell, are about as flavorful and rich as desserts come. Many variations exist for the classic sweet treat, but this particular recipe for bourbon pecan bonbons is a must try for chocolate fanatics.
Despite the fanciness of their name, bonbons are actually fairly simple to make.
1/2 cup + 2 tbsp heavy cream
1/4 cup light corn syrup
2 tbsp honey
9 oz bittersweet chocolate
2 cups crushed shortbread cookies
1 cup chopped toasted pecans
2 tbsp bourbon
1/4 cup sugar
1/2 cup ground pecans

First, combine the cream, honey and corn syrup in a pot and bring to a boil. Then, take your mixture off of the heat and pour into a bowl over your chocolate. After letting stand for a minute, stir together and then slowly add the shortbread cookie crumbs, chopped pecans and bourbon. Mix together and then chill in the refrigerator for one hour.
Then, combine the sugar and ground pecans in one bowl. When your chocolate mixture is done cooling, scoop small balls of the dough out to then roll them into your sugary pecan mixture. This not only adds a touch of garnish to your chocolate-coated candies, but also gives the dessert a little additional crunch.
After you have coated your chocolate bonbon balls with the sugar and ground pecans, enjoy! Bet you can’t eat just one.
