Here are a few things to keep in mind as you try out your new recipes:

  • Fry up the whole bird – don’t settle for just the legs.
  • If you have time to brine the meat in buttermilk or other liquid, you will end up with a delicious moist piece of meat to sink your teeth into.
  • You don’t need an expensive fryer, instead try a cast iron skillet.
  • No matter how many carbohydrates you are trying to cut out, don’t skip the breading. If you are cutting carbs, use alternative coating techniques like some of the recipes above.
  • Don’t use extra virgin olive oil
  • Use a thermometer to test your meat. Chicken should be cooked to 165 degrees F.
  • Let the chicken cool on a baker’s rack – not paper towels, which make it soggy.
